Grain-Free Homemade Pasta

Ingredients

Dry ingredients

  • 2 cups of almond flour

  • 2 cups of tapioca flour

  • 4 teaspoons xanthum gum

  • 1 tablespoon nutmeg

  • 1 tablespoon garlic

Mix well, set aside

Wet ingredients

  • 3 – cold - large eggs

  • 3 – cold – large egg yolks

  • 2 tablespoons olive oil

  • 1 tablespoon ice water

Mix well

Instructions:

  1. Add flour mixture and wet ingredients to an electric mixer and mix well until a dough is formed. Texture should be like playdough. Add more flour or water until dough is the perfect texture.

  2. On a wooden cutting board, sprinkle with Cassava flour. This keeps the dough from being sticky.

  3. Separate dough into balls and roll each ball until flat.

  4. Cut with a knife into approximately 3x5 sizes, square or triangle, doesn’t have to be perfect.

If using an electric mixer with pasta attachment, follow instructions to make pasta.

For a hand pasta maker:

  1. Place setting to 3. (mid-sized)

  2. Using the flat roller setting, place each dough piece into the flat roller and it should like a lasagna noodle. If the dough comes out in pieces, kneed it and roll it through again.

  3. Place the noodles on a tablecloth to dry as you finish the rest of the dough.

  4. Prepare a baking sheet with plastic wrap on the bottom and sprinkle Cassava flour on the plastic wrap.

  5. Once the dough is all rolled out, take each lasagna noodle and run it though the fettucine roller. (This dough is fragile so you won’t be able to make spaghetti noodles.)

  6. Grab the fettucine as it comes out and place it on the baking sheet. Continue until the sheet is full, then sprinkle more Cassava flour over the pasta.

  7. Place another lining of plastic wrap and Cassava flour and begin another layer of pasta. Continue until all pasta is finished.

To store, place in an airtight container and freeze – it will stay fresh for 2-3 months.

Cooking

Bring water to a rolling boil, then add pasta. Cook for 15-20 minutes or so. Keep checking it, if you over cook this pasta it will start to disintegrate.
