Paleo Berry Pancakes

These pancakes are Paleo, Gluten-Free and Dairy-Free!

  • prep time: 10 minutes

  • cook time: 20 minutes

  • total time: 30 minutes

Servings: Makes 4 large pancakes

Ingredients:

  • ½ almond flour

  • ½ cup tapioca flour

  • ¼ cup coconut flour

  • 3 teaspoons baking powder

  • 2 eggs

  • ½ cup coconut/almond milk

  • ½ cup blueberries

  • ½ cup raspberries

  • butter

Instructions:

  1. Combine flours, baking powder and coconut/almond milk and mix well by hand.

  2. Separate egg yolks and add to mixture.

  3. Beat egg whites until fluffy and add to mixture, mix well by hand into a batter.

  4. Crush berries and mix into batter.

  5. Cook on a buttered griddle pan on high heat and flip when slightly brown.

  6. Cook flipped side until brown

  7. Add more butter or other toppings
