Grain-Free Chicken Cutlets

Ingredients:

  • 2 lbs chicken breasts sliced thin (like chicken tenders)

  • 3 eggs

  • 1 cup almond flour

  • 1 cup tapioca flour

  • salt

  • black pepper

  • Italian seasoning

  • olive oil

Instructions:

  1. Mix eggs in a bowl

  2. Add all seasonings and mix again

  3. Add chicken breasts into the egg mixture, mix well

  4. In a plate, add flours, and the same seasonings, mix well

  5. With a fork, grab a piece of chicken and cover with flour mixture

  6. Pat down with your palms

  7. Place in another plate. Continue until all breasts are done.

  8. Heat oil in a deep fry pan using medium heat-about 1/2" deep

  9. Place chicken into the heated oil

  10. Cook on each side until browned

  11. Place on paper towels to drain the oil.
