Grain-Free Chicken Cutlets

Ingredients:
2 lbs chicken breasts sliced thin (like chicken tenders)
3 eggs
1 cup almond flour
1 cup tapioca flour
salt
black pepper
Italian seasoning
olive oil
Instructions:
Mix eggs in a bowl
Add all seasonings and mix again
Add chicken breasts into the egg mixture, mix well
In a plate, add flours, and the same seasonings, mix well
With a fork, grab a piece of chicken and cover with flour mixture
Pat down with your palms
Place in another plate. Continue until all breasts are done.
Heat oil in a deep fry pan using medium heat-about 1/2" deep
Place chicken into the heated oil
Cook on each side until browned
Place on paper towels to drain the oil.
