Garden Squash with Italian Sausage Stuffing

Ingredients:

  • 1 Large garden squash

  • 6 large tomatoes - diced

  • fresh garlic cloves

  • diced white onion

  • olive oil

  • salt

  • black pepper

  • Italian seasoning

  • Hot Italian sausage - ground

  • Gluten-free bread crumbs

Instructions:

  1. In a large saute pan, add water and olive oil to cover the bottom

  2. Add chopped garlic and onions

  3. Saute until translucent

  4. Add tomatoes and seasonings, cover, and stir occasionally until tomatoes are almost melted.

  5. In a separate saute pan, cook Italian sausage, but leave it somewhat pink

  6. Add Italian sausage into a bowl, pour over tomato mixture and add bread crumbs

  7. Mix well

  8. Cut large garden squash in half or quarters and scoop out seeds and middle.

  9. Stuff garden squash with sausage stuffing

  10. Pour olive oil on the bottom of a large casserole dish (or deep baking pan).

  11. Add stuffed squash to the dish/pan and cover with casserole cover or aluminum foil

  12. Bake at 400 degrees for 1 hour and 20 minutes until cooked. (Uncover the last 10-15 minutes to brown)

Once cooked, let set for 10 minutes.

Extra stuffing? add an egg, some cheese and more breadcrumbs and make meatballs!
