Baked Italian Sausage Meatballs

Ingredients:

  • 1 egg

  • fresh tomatoes - diced

  • fresh garlic cloves

  • diced white onion

  • olive oil

  • salt

  • black pepper

  • Italian seasoning

  • Hot Italian sausage - ground

  • Gluten-free bread crumbs

Instructions:

  1. In a large saute pan, add water and olive oil to cover the bottom

  2. Add chopped garlic and onions

  3. Saute until translucent

  4. Add tomatoes and seasonings, cover, and stir occasionally until tomatoes are almost melted.

  5. In a separate saute pan, cook Italian sausage, but leave it somewhat pink

  6. Add Italian sausage into a bowl, pour over tomato mixture and add bread crumbs

  7. Add egg

  8. Mix well

  9. Roll into golf-sized meatballs

  10. Lightly pour olive oil on the bottom of a baking pan (or spray with olive oil spray)

  11. Bake at 400 degrees for 45 minutes uncovered
