Ingredients:
Cod
Baby spinach
Goat's Brie
water
salt
pepper
Dill
Thyme
extra virgin olive oil
Instructions:
Cod
In a saute pan, add water and olive oil
Add cod
Add salt, pepper, dill, thyme
Drizzle extra virgin olive oil on top
Cook on high heat with cover on for 10 minutes
Add Goat's Brie (cow or goat's brie based on preference.
I use cow's brie on my husband's half and goat on mine.)
Cook on high heat with cover for another 5 minutes
Spinach
In another saute pan, add water to cover 2/3 pan bottom
Add spinach
Add salt, pepper and fresh garlic
Drizzle extra virgin olive oil on top
Cook on high heat for 15 minutes, mixing occasionally
Add spinach onto the plate, and top with fish.
