Ingredients:

  • spinach bunches

  • For each spinach bunch:

  • 2 eggs

  • 2 teaspoons baking powder

  • 1/2 cup cassava flour (or tapioca/almond flour mix)

  • salt

  • black pepper

  • Italian seasoning

  • oregano

  • garlic powder

Instructions:

  1. Mix eggs, baking powder and flour in a bowl

  2. Mixture should be thick

  3. Add seasonings

  4. Wash spinach and take very wet spinach and add to a skillet

  5. Cook for about 2-5 minutes until steamed fully

  6. Add spinach and some of the spinach juice to the mixture and mix well

  7. In a non-stick pan, add olive oil (about 1/2 inch deep)

  8. Heat oil

  9. Grab a small much of spinach with tongs and place in oil. Push down on top of tongs to make flat.

  10. Add as many bunches as you can in the pan.

  11. When brown, flip over and cook the other side.

  12. Place on paper towels to drain the oil.

  13. Sprinkle parmesan or pecorino romano cheese on top.

Optional: Use Green Swiss Chard

  • For Swiss Chard, boil the leaves for 1 hour in water (until soft)

  • Boil the stems for 1-1/2 hours in water (until soft)

  • Cook leaves the same as spinach

  • Cook stems by adding to an egg and seasoning only mixture, add gluten-free bread crumbs and fry
