Paleo Chocolate Chip Cookies

Paleo Chocolate Chip Cookies

Servings: About a dozen cookies

Ingredients:

  • 1 stick of butter melted

  • 1/2 cup of unfiltered honey

  • 2 tbsp vanilla

  • 1 1/2 cup almond flour

  • 1 1/2 cup tapioca flour

  • 1/2 cup coconut sugar

  • 1 tsp sea salt

  • 1 tsp baking soda

  • 2/3 cup Enjoy Life chocolate chips

Instructions:

  1. Mix all ingredients well with a wooden spatula

  2. Add chocolate chips

  3. Mix again. Grain-free cookies don't have gluten so you may need to mix them in your hand to make sure they're tight.

  4. Line a cookie sheet with parchment paper

  5. Use a tablespoon to grab some dough and place on cookie sheet

  6. Flatten dough balls with the palm of your hand

  7. Bake at 350 degrees for 15-18 minutes. I like my cookies flat and crispy. If you do as well, then follow this step:

  8. Shake pan to flatten after 10 minutes, then continue baking

  9. When baking is done, slide the parchment paper with the cookies on it from the baking sheet to another surface to cool off.

Wait 10 minutes then eat!!
