Grilled Halibut and Rainbow Carrots

Ingredients:
Halibut
rainbow carrots
water
salt
pepper
butter
Italian seasoning
Dill
Thyme
extra virgin olive oil
Instructions:
Preheat grill to high heat
Lay out two sheets of aluminum foil and fold up edges to form a pan
Add water to each (approx. 1/4 to 1/2 cup-based on ingredients)
Lay down Halibut in one foil pan
Add dill, thyme, salt, pepper, butter
Slice carrots and lay down in the other foil pan
Add Italian Seasoning, salt, pepper
Drizzle extra virgin olive oil on top of both carrots and Halibut.
Fold up both aluminum foils until wrapped tightly
Grill on high heat for 10 minutes with halibut skin side up first (this will allow juices from Halibut skin to drop into fish and adds flavor).
Turn over and grill another 10 minutes
