Grain-Free Breakfast Bars

These bars are Paleo, Gluten-Free and Dairy-Free!

Servings: 6-8 bars

Ingredients:

  • 1/4 cup of Pitted Dates

  • 1 cup Black Mission Figs

  • 1 cup dried berries/cranberries

  • 1/2 cup of Pumpkin Seeds

  • 1 cup Raw Unsalted Cashews

  • 1/2 cup Walnuts

  • 1/2 cup Almonds

  • 1/2 tsp Pink Himalayan Sea salt

  • 1/4 cup Raw Unfiltered Honey

  • 4 tbsp refined coconut oil

  • 1/2 tsp cinnamon

Instructions:

  1. In a large food processor, add all ingredients:

  2. Pulse until all incredients are chopped into small pieces and mixed well together

  3. Line a small rectangular tupperware or cake pan with wax paper

  4. Add mixture and spread evenly across the pan

  5. Top with more wax paper and press down on mixture.

  6. Cover with lid and place in the refrigerator for several hours or overnight.

  7. Remove from tupperware and slice evenly into bar-sized squares, approximately 2'x3'. These are filling so they can be small.

  8. Remove all wax paper and place the bars back into the tupperware and keep refrigerated.

  9. If the bars need to be layered to fit into the tupperware, place the wax paper in between so they don't stick.

Breakfast bars are freshest if eaten within two weeks.
