Paleo Cinnamon Raisin Walnut Cookies

Servings: About a dozen cookies
Ingredients:
Dry Ingredients
1-1/2 cup Almond flour
1/2 cup Tapioca flour
1/2 tsp Himalayan Pink Sea Salt
1/2 tsp baking soda
1 tbsp cinnamon
2 tbsp ground flaxseed (optional)
Wet Ingredients
1/4 cup of raw unfiltered honey
1/2 cup of almond butter
2 eggs whisked
1 tbsp pure vanilla extract
Fold in
2/3 cup raisins
2/3 cup chopped walnuts
Instructions:
Mix wet ingredients well with a whisk until almond butter is blended well
Add dry ingredients and mix well with a spatula
Add raisins and chopped walnuts
Line a cookie sheet with parchment paper
Use a tablespoon to grab some dough and place on cookie sheet
Bake at 375 degrees for 15-18 minutes
When baking is done, slide the parchment paper with the cookies on it from the baking sheet to another surface to cool off.
Wait 10 minutes then eat!!
