Paleo Cinnamon Raisin Walnut Cookies

  • Servings: About a dozen cookies

Ingredients:

Dry Ingredients

  • 1-1/2 cup Almond flour

  • 1/2 cup Tapioca flour

  • 1/2 tsp Himalayan Pink Sea Salt

  • 1/2 tsp baking soda

  • 1 tbsp cinnamon

  • 2 tbsp ground flaxseed (optional)

Wet Ingredients

  • 1/4 cup of raw unfiltered honey

  • 1/2 cup of almond butter

  • 2 eggs whisked

  • 1 tbsp pure vanilla extract

Fold in

  • 2/3 cup raisins

  • 2/3 cup chopped walnuts

Instructions:

  1. Mix wet ingredients well with a whisk until almond butter is blended well

  2. Add dry ingredients and mix well with a spatula

  3. Add raisins and chopped walnuts

  4. Line a cookie sheet with parchment paper

  5. Use a tablespoon to grab some dough and place on cookie sheet

  6. Bake at 375 degrees for 15-18 minutes

When baking is done, slide the parchment paper with the cookies on it from the baking sheet to another surface to cool off.

Wait 10 minutes then eat!!
