Ingredients:
gluten-free pasta
sea scallops
butter
Goat's milk cheddar
Goat's mozzarella
Pecorino romano cheese (pure sheeps milk)
Almond milk
parsley
smoked bacon
sea salt
black pepper
Instructions:
In a large pot, boil water and cook pasta as directed
Using a grill pan, grill bacon
Using another grill pan, grill scallops in butter until browned, seasoned with salt, black pepper and parsley
Shred cheeses
When pasta is done, drain water and add cheeses and almond milk, mixing until creamy
Cut up bacon
Bowl pasta and top with bacon and scallops
Optional:
Replace scallops with chicken and add peas
